Nochebuena Salad: A holiday classic reimagined

Inspired by the festive colors and freshness of a Nochebuena (Christmas Eve) table, this vibrant salad brings lightness, balance and joy to any season.

Ingredients

  • 6oz baby greens and arugula mix
  • 2 oranges in segments
  • 1 small jicama, julienned
  • 1 cup pomegranate seeds
  • 1 med-large beet, julienned
  • 1/4 red onion
  • 1/4 cup toasted pepitas
  • salt and pepper to taste

Instructions

  1. Chop all ingredients
  2. In a large mixing bowl, assemble your ingredients, with the exception of the beats.
  3. Toss with viral vinaigrette
  4. Layer the beets on top with another drizzle of vinaigrette
  5. Salt and pepper to taste
  6. Enjoy!
