Ingredients

  • 1 large butternut squash
  • 1 tbsp coconut oil or avocado oil
  • 1-2 teaspoons maple syrup
  • Salt and cayenne to taste

Instructions

  1. Preheat the oven to 375 degrees.
  2. Peel and chop the butternut squash into bite-sized squares (or buy it pre-chopped, which is such a time-saver).
  3. Place on a large sheet pan lined with parchment paper.
  4. Place the coconut oil in a small bowl and melt in the microwave for 10-15 seconds beforehand and toss with the squash.
  5. Drizzle with a little maple syrup, then sprinkle with salt and cayenne.
  6. Salt.
  7. Toss well, and roast for about 20-30 minutes, until the butternut squash begins to brown. Salt to taste again, if necessary, and enjoy!

In health,
Claudia
